do pickles exsist of course they do i can right now pick one up and slap you in the face with it now if they didn't exist i could never do that.
but as for what you seem to have ment should they be called pickles again the answer is yes many foods aquire a different name when pickled sourqurat is just pickled cabbage but has it's own name the pickle goes through a stagering change when pickled that leaves it as a completly different food therefore earning it's name The Pickle

Then all pickled foods need their own name, what makes cucumbers special?

As a concept, pickles exist. The proof is that I have an understanding of that concept and you asking the question evidences that you also have an understanding of the concept conveyed through the phonetic and written symbol "pickle". Whether it is fair or not that cucumbers have their own common noun for their pickled state is another matter.
Furthermore, it is impossible to prove whether or not pickles exist. We can evidence their existence through our perception and indeed bring them into existence in our perceived reality by means of belief, but whether they exist within the scope of our understanding of what they are in real reality, we lack the means of finding out.
Was that a clear answer?

Pickles are anything that has undergone the pickling process. Sauerkraut is pickled cabbage, pickled pigs feet are an abomination. Pickled cucumbers are just called pickles because saying extra pickled cucumbers is just stupid.
