Before the UU were changed to miners I had some time to make a few raids. After puting together the info I got I can say this:

The average UU stolen it's 2% per 15 turns raid.
The max is like 3% and the min like 1%. This may vary a bit, but the real values should be very close.
Not sure about strike power vs defense .... I had like 8 mil strike vs 0 defense, but I don't think this will really change things too much.

PS - I did returned the UU.

Well before everything was changed to miners, I had the chance to raid one of my farms, and with my 300mil attack vs 0 defence I was able to gather about 2% of the UU aswell. I think that 2% is the general norm.

any idea. if someone raids you will it come up on the attack log....or intelligencE???

Raids count as Attacks so you want to check attack logs for details
