i have been getting asked quite a bit i find out i dont know all that much..

Raid is a way to steal Untrained Units from an enemy instead of Naq when you launch a normal attack, you just pick Raid instead of Attack. However, it ONLY takes untrained units and since we had all UU's converted into miners recently it's probably going to be a little while before this is a viable option. When you spy someone successfully you can see miners as "super-untrained", don't let that fool you into thinking they are UU's and ripe for a raid, you need to make sure you check the non-super Untrained part of your spy report for true UU levels.
You cannot upgrade raiding, you will get 1-3% of the enemies UU's per attack, this is why they need to have a load of UU's to make it worthwhile.
Since raiding works like a normal attack having enough defense will stop an enemy taking them, but the easiest way to avoid it is to convert all or most of your UU's into miners, spys, anti's etc since no trained units can be stolen.
Covert doesn't help you avoid raids as such, but if you have a high enough covert it will stop people spying on you and seeing if you have any UU's to be raided in the 1st place, so it is always useful to get some.
Covert skill on it's own determines whether an enemy can see your stats, they need a similar or better covert to see some of what you have and a significantly higher covert to see all your details.
You can also use Covert agents to sabotage enemies weapons, again, you need more covert than the enemy to succeed, more so than to successfully spy them. In both spying and sabotage operations it's likely you will loose some spys if you fail so pick targets with care. As a general rule if you can see everything the enemy has with a spy mission, you can *probably* successfully sabotage them.
Also note that the Realm Alert level option on the main stats page can help you fend off spying and sabotage operations from enemies, at a cost of some naq/turn though.
