hmm... we cant recommend just a single book... in our opinion, most of the extended universe includes good books, but the best area to look is the area set after the films...

wait... when looking through the ones we've read, one that struck us as great that wasnt part of a sub-series is:
Dark lord: The rise of Vader - by James Luceno

it gives clone war ending and early empire history from a new perspective...

Star Wars: Traitor is a great novel.

Actually very philosophical and has a lot to actually think about.

Star Wars: Tales of the New Republic is also good.

personally i think that Star Wars, Fate of the Jedi : Outcast is a great book (good beginning and a surprise that none of us ever could guess!) I also would say that the Legacy series is a great series too, i would finally also recommend not only the X-wing series but also the New Jedi Order Series(if you haven't read it yet). Yeah The Heir to the Empire trilogy was a great beginning of the legacy of Star Wars books :)
