ok, so whats considered as an untouchable def as far as planets are concerned?

I would advise you use merlins instead, it is A LOT cheaper and it completely hides the planet.

planets wont be hit unless they have good stats, or you are in a war. If you are somewhere peaceful, your planets are safe so long as you dont have duals or huge stats.
What sort of planet are you trying to keep safe?

Biggest fleets are 1.2t (i think) so +8t is safe but not practical as planet defense cost triples after you have 500k planetary defenses.
