I apologize for a n00b question here - but are serial ascensions possible?

For example, if i get 2000G&R, can i ascend two steps at once or directly after one another?

No, the 2000 G&R will only go toward your next ascension.

I may be wrong, but from what I recall once you ascend your G&R resets back to 0,

You are right it does reset back to 0
