How many times does a super unit multiply weapons power?

10 times. From the guide: "This is obtained from taking your defence weapon strength for each weapon manned by a super unit, x 10"

if I have 228,791 ascended weapons (5750) and that much supers(228,791) what should my def be?

Racial bonus? As I understand it, there's no racial bonus. Technology bonus and ascended bonus.

5750 is the power of ascended weapon, ascended beings doesn't have race bonus for def, only the ascended bonus.
