Although a watch lift is one of the most difficult steals it can be easy. The watch does not have to be extracted from the pocket like a wallet does.
A bet an amateur pickpocket could take your watch in the time it takes to do a handshake.

thats unlikely...one, I don't shake random people's hands with the hand that has my rolex, two the rolex weigh's almost two pounds, the band is solid steel, i would feel the weight being taken off my wrist, i keep the band espeically tight just incase of pick pockets.

you know most people who see someone wearing an expensive watch and braging about it think that that person is overcompensating for somthing
it their wearing a watch like that and not braging, well, thats just fine

I think 20-30K could be spend on rent, food, donate to UNICEF, etc.
