I have suspected this for a while. I got my post count up to 55, and then the next day it was down to 30. Then I made a few more posts(as bids on planets) and got it up to 34 posts, and now it is back down to 33. Yesterday I made a bid on a 10k UP planet for 100k uu, and I went to look in the "View your posts" section it wasn't there and the thread that I made the post in originally, my bid wasn't there. Can someone please look into this or explain why it is happening?

Posts in the market forums are deleted on a regular basis once they are either closed or rather old.

This was a post, not thread in a current topic. The thread that I posted in, still has active posts.

Spam Temple stuff also gets deleted quite regularly to make space for new spam

I don't post in the Spam Temple. The only areas I post are the planet market, war area, FAQ's and TV room.

I looked though the mod logs for Aug 2nd. No mod/admin deleted any posts in any of the markets; only full topics were removed.

It's not possible that for someone (non mod/admin) to remove another person's posts, and all non mod members of special groups are not part of ones that have any sway over the market:
ie. TGW annual Awards Panel, the Newsletter, etc.

Anything in the planet market that is either no longer active or marked at closed is deleted. Threads and posts. If the thread is deleted, so is the post.

When a thread is deleted, does the post count drop? If so, how can people have 1000+ posts?

Because they are active outside the market.
