Missing Attack Units
Whenever I attack someone the attack log says that I bring in 2,147,483,647 Attack Spiders to the fight, when in fact I am bringing 2,500,000,000 into the fray everytime. Whether or not the missing 352,516,353 attack spiders are secretly helping me or not I'm not sure of yet, but if they aren't then it could eventually become very tough to break through people's defenses.

Does this mean that a person can't attack or defend with more than 2,147,483,647 units? Or do the extra units just become "invisible" on the attack log?

I would guess invisible. You could always try with defenses above that number

The problem is not in the game 'behind the scene' mechanics but in the game 'display' mechanics.
So while it seems you do not send more than that amount of units into battle in your attack log, the successfulness of an attack is still determined by the real amount of attackers versus real amount of defenders.
