Hacking is unauthorized use of computer and network resources. (The term "hacker" originally meant a very gifted programmer. In recent years though, with easier access to multiple systems, it now has negative implications.)
So, if I stole your password from a master list notebook and used it to gain access to your account, that would be hacking because it is unauthorized use of computer and network resources.
If I managed to steal your ATM pin by spying and use it, it is hacking because it's unauthorized use of computer and network resources.
Again, any activity related to theft, alteration and destruction of electronic information is called hacking.
